I think it's because it's two different types of splitting.

For the films split/disambiguated by year, it's usually due to another work/installment sharing that title (compare Film. The Incredible Hulk (redirect to the 2008 film page) and ComicBook. The Incredible Hulk).

For the ones that have "1", it's usually to distinguish them from a page that's about the whole series of films. In this case, Film.Iron Man is a redirect to Film.Iron Man Films.

That being said, Film.Ant Man 1 is split like the latter despite fitting with the former. (and Film.Ant Man redirects to it). While the film Film.Thor is where it is while ComicBook.Thor is a redirect to ComicBook. The Mighty Thor. So yeah it is inconsistent.

With Film.Iron Man 1, it's formatted like because the sequels are called Iron Man 2 and Iron Man 3. IIRC, adding a "1" takes priority over adding the year when the sequels are numbered (unless there's a remake or something that has the same title).

Thor is titled like it is because it's not overlapping with another work by the same name. The comic is referred to as The Mighty Thor, we don't have any other works that are just called Thor, so we don't need to add the year to disambiguate it. Eternals is actually the same way, it's just that Eternals (2021) was made a redirect just in case.

The only one that might need to be renamed is Film.Ant Man 1, since the sequels aren't called Ant-Man 2 and Ant-Man 3. So, Film.Ant Man 2015 would be the proper namespace for it.

And now does it confuse you that Film.Guardians Of The Galaxy Vol 1 is merely a redirect?

This standard is unfortunately hardly respected.

Following the above explanation, the first Deadpool movie should be Film.Deadpool 1 and not Film.Deadpool 2016, since the sequel is Film.Deadpool 2.

Granted, for Film.Deadpool 2016, that was because the page was made before the sequel was announced. So, the year was added to disambiguate it from the comic and video game. The other pages mentioned above were disambiguated after the sequels came out.

Or after sequels were confirmed.

The two not-yet-policy pages about this seem to conflict with each other a little on this. Sandbox. How To Create A Disambiguation Page says that "the preferred method for disambiguating between works of the same name is adding the year of publication, so choosing an alternative retronym would demand a reason for why the year would cause issues." However, Sandbox.Page Title Collision lists several disambiguation methods from most to least effective or common, with a Retronym like adding "1" to the end being at the very top (just above using the year of publication). These aren't entirely contradictory, but the wording on the former page seems a bit more absolute than it might be in practice.

^7 A similar example is how the first Back to the Future film has its page at Film.Back To The Future 1 (Arabic number) when the sequels are titled Film.Back To The Future Part II and Film.Back To The Future Part III (Roman numerals).

My guess is that the retronym "1" would be sometimes favored because we are allowed to make it disappears through a custom title, while the year would not.

This certainly explains the above Back to the Future example.
