The theme song to Ren And Stimpy was by a group called Der Screamin' Lederhosen, comprised of people who worked on the show (Jim Smith on guitar, Chris Reccardi on bass and Scott Huml on drums).

Joe Prescetto performed the '"Duck Tales'' theme (Woo-hoo) and the Chip N Dale Rescue Rangers themes, while The Jets did the extended version of the latter theme.

And BTW, I did some digging and it looks like the singer for the Dragon Tales theme is Mary Wood. I found like two songs by her on You Tube (on separate channels, no less) and she only has two IMDB credits so she's pretty obscure. It was also co-written by Joey Levine and Jesse Harris.

Simple Plan performed the theme song to Whats New Scooby Doo! They also do several insert songs during the chase montages, and even appear as themselves at one point!
The theme to Steven Universe has the main cast singing of course, but the song is written by the show creator, Rebecca Sugar. She also writes all of the insert songs.
Bowling For Soup performed the theme to Phineas And Ferb. Martin Olson writes some of the songs for Phineas And Ferb along with the show creators. His daughter, Olivia, is Vanessa in the show, and she is also known as Marceline in Adventuretime!

I've always wanted to know who performed all those generic sunshine pop songs used in the original Scooby Doo Where Are You's chase sequences. I imagine bands who thought it could make them the next Archies.
EDIT: Oh, well, nevermind, now I know. Apparently one of the songs was actually done by Davy Jones. Groovy.

Not animated, but The Adventures Of Pete And Pete theme song, "Hey Sandy" is by Polaris.
