I'm inclined to say no, since Queer Media is meant to be works wherein LGBT+ people and issues are the main focus, not just a work that happens to feature a few of them as playable characters - but I haven't played the game, so I can't quite say.
^ In Apex Legends, the characters’ sexual orientation takes a backseat to shooting each other, so I’d say no.

I'm also questioning whether Bugsnax really counts. Yeah, there are five queer characters in the game (that's over a third of the cast), but their queerness is incidental. The two gay couples are treated exactly the same as the straight couples, and the nonbinary character is just a character who happens to be addressed with they/them pronouns. Turning these characters straight or cis would barely affect the plot.
Queer Media probably needs a look by TRS and I'll admit that I've contributed to the problem. But the initial question, no I would not consider Apex Legends Queer Media.
In that case, there may be quite a few works that got tagged as Queer Media just because they have queer characters in them.
Space Battles Dot Com fanworks (unnoficial) index in my Sandbox.One of the listed works is Ready Jet Go!, but the bisexual main character is only Ambiguously Bi in the show and was confirmed bisexual after the show ended. I don't think "queer allegory" works should count unless they also have queer characters, i.e. Steven Universe.

^^I thought about proposing a "Queer-Related Media" to solve that problem.
Or a "LGBT Representation in Media" super-index to cover various representation in media. Maybe with sub-indexes to cover specific groups, i.e. "Lesbian Representation in Media"? (It could also solve the problem with losing Bi The Way and the like — they're not tropes and can't be crosswicked, but still provide examples of certain works featuring LGBT characters for those who want to find them.)
