Nobuyuki Yazawa

Nobuyaki is one of the two creators for Izakaya Nobu. He is the bar's master and chef, usually responsible for making all the dishes served to the customers. He used to work in a popular restaurant called Yukitsuna (ran by Shinobu's family), but he later moved on to open up his own store. He is skilled in cooking different cuisines, but his main strength lies in Japanese cuisine. He also has a bad habit in buying ingredients in bulk due to them being cheaper than just buying smaller quantities of the same ingredients.

• Hidden Depths: Nobuyuki is a big fan of deduction and drama shows. As a result, he is prone to overanalyzing someone if they catch his attention. However, as stated by Shinobu, his deductions are rather amateur.
• Supreme Chef: Naturally, he has to be this when he is working as the head chef in his own store. It helps that he had previous experience from working in a popular restaurant ran by Shinobu's family.

Shinobu Senke

Shinobu is one of the two creators for Izakaya Nobu. She is the heiress to a popular restaurant called Yukitsuna that Nobuyaki used to work for. However, when her family tried to make her marry the son of the bank's vice president for the money, she refused and left both her family and the restaurant to work under Nobuyaki's store as the bar's waitress.

• Achievements in Ignorance: While Nobuyuki went out to figure out how to cook schnitzel for Baron Brentano, Shinobu ended up preparing the baron some schnitzel sandwiches by complete chance.
• Blessed with Suck: She inherited her predecessor's great sense of taste. This made her vital in the prosperity of her family's restaurant as well as the restaurant's heiress. However, her status and position would led her to be forced by her family into an arranged marriage with a rich man. This would force Shinobu to leave both her family and her restaurant to avoid the arranged marriage.
• Older Than They Look: She is in her mid-twenties, but her youthful appearance made it easy for people to mistake her for being a young teenager.

Aitheria Employees

Eva

Eva was a poor young girl who snuck into Izakaya Nobu to try to steal the bar's faucet in order to give her struggling family clean drinking water. When she got caught by Shinobu, the waitress and her boss decided to hire Eva to help serve and clean in the bar.Eva's family used to run a farm, but a bad harvest left her family broke. However, thanks to working in Isekai Nobu, Eva was able to help her family financially recover.

• Adorably Precocious Child: She is quite mature and polite for her age, which lets her charm several of the bar's patrons.
• Heterosexual Life-Partners: She becomes close friends with Camila.
• Older Than They Look: Despite her short size making her look to be around ten years old, she is actually fourteen years old.

Hermina

Hermina is a young woman from a fishing village from the north. She would marry Berthold and move to Aitheria. Due to complication with their finance, Hermina decided to work in Izakaya Nobu for a while as she and her husband properly settle down.

• Red Oni, Blue Oni: She is the blue oni to her husband's red oni.

Hans

Hans is one of the palace guards in the city of Aitheria. His father and his brother works as a glassblower. He, himself, didn't initially know what do become after leaving the guards. Eventually, he decided to work as a cook in Izakaya Nobu.

Leontine

Leontine is a mercenary who fought in a war a few years ago. She went to Aitheria to meet with Berthold, whom she fought against in the war and developed feelings for. After finding out that Berthold had already gotten married, she tried to move on with her life. Eventually, she decided in work in Izakaya Nobu as a waitress.

• The Alcoholic: Just like several of the patrons in the bar, Leontine enjoys drinking a lot of bear from Izakaya Nobu.
• Animal Motifs: Squids. During her earlier days as a mercenary, she wore a helmet that resembled a squid. She came from a fishing village from the south. And she fought against Berthold, a strong soldier who happened to have a fear of squid.

Aitheria

The Nobility

The Former Emperor, Conrad IV

The former emperor of Aitheria is an old man with a gentle yet mature mind. Despite stepping down as the emperor and the current emperor being his grandson Konrad, the former emperor still held strong political power and influence over the country. He played a vital role in the legalization of lager and the conference of the Three Northern Territories.

Johann Gustav

Johann is one of the grandchildren of the former emperor. He is taking care of his niece Hildegard, who lost her parents and is currently too young to live by herself. He took his niece to Izakaya Nobu as a last ditch chance of pleasing his niece with her impossible food request.

Hildegard

Hildegard is the Imperial Princess of the royal family and the great granddaughter of the former emperor. She lost her parents some time ago and under the care of her uncle Johann Gustav. She eventually left her uncle's care after her arranged marriage with Maximillian.

• Trademark Favorite Food: Ankake Yudofu became her favorite food as it was the first dish she received that passed her impossible food request.

Brentano

Brentano is a baron who got involved in Izakaya Nobu through Damien. He is known as a renown gourmet baron, taking great interest in tasting new cuisine and delicious dishes. His investment in food allowed him to meet and become associated with the great food poet Krohwinkel.

• Inconsistent Spelling: His name is written as Brentano or Breton.

The Holy Order

Edwin

Edwin is the new deacon of the church in Aitheria. He is a bald old man with a long white beard and mustache. Despite being in the church, he enjoys drinking alcohol and he is a regular customer at Izakaya Nobu.

• The Alcoholic: Despite being the deacon of the church and the church's teachings forbidding him from drinking, Edwin is seen frequently drinking sake from Izakaya Nobu.

Thomas

Thomas was a former student of Deacon Edwin. He is currently a priest who takes the church's teachings seriously while practicing astrology at times. He was chosen as Edwin's temporary replacement while the deacon was away.

• Trademark Favorite Food: Thomas has a love for vegetables, particularly eggplants.

The Guilds

Gernot

Gernot is an infamous tax collector in Aitheria. He was hired by the country to tax the different merchantry guilds, which led him to develop a terrifying reputation for taxing people so much that he had enough money to build himself a palace. He originally planned to tax Izakaya Nobu upon finding out about its existence, but changed his mind when Shinobu's Napolitan spaghetti gave him a Heal Face Turn.

• Secret-Keeper: A hilarious example. He mistook Eva for being a secret granddaughter to the former emperor because Eva happened to have the former emperor's handkerchief. Gernot was too scared to question it, and he decided to keep the "secret" to his grave.
• Trademark Favorite Food: His favorite food is pasta. This passion for it was reignited after tasting Shinobu's Napolitan during his first visit to Izakaya Nobu.

Lorentz

Lorentz is a member of the Craftman's Guild. He is a skilled glass maker and glass blower. One of his sons is Hans, a member of the Aitheria Guards.

Holger

Holger is a member of the Craftman's Guild. He is a blacksmith who makes everything from tools to weapons. He has a sibling-like rivalry with Lorentz.

Godhardt is one of the leaders of the Water Transportation Guilds. He is the leader of the Water Dragon's Scale, Aitheria's largest water transportation guild. His brutish appearance and temperamental mood makes his feared by other people

Eleonora

Eleonora is one of the leaders of the Water Transpiration Guilds. She is the leader of Harpies Shanty guild along with her mother. The Harpies Shanty is the richest and most influential of the water transportation guilds in the kingdom.

Reinhold

Reinhold is one of the leaders of the Water Transpiration Guilds. He is the leader of Golden Willow's Boat, which he inherited from his deceased father. His guild had deteriorated due to the competition from the other guilds. When his guild got in trouble with the Water Dragon's Scale guild, it was thanks to Izakaya Nobu's intervention that Reinhold was saved with the discovery of how delicious the eels from his territory are.

Berthold

Berthold is a company commander of the platoon that Hans and Nikolaus are a part of. He fought in a war a few years ago, and his terrifying skills in combat earned him the nicknamed "The Devil". He later got married with Hermina, and eventually became the father of a pair of twins.

Nikolaus

Nikolaus is one of the palace guards in the city of Aitheria and a co-worker of Hans. He was the one to introduce Hans to Izakaya Nobu during the first chapter/episode of the series.

Adolf and Angelica

Adolf and Angelica are the younger siblings of Eva. After their older sibling started working in Izakaya Nobu, the younger siblings worked in the farm under the domain of Baron Brentano. They have a bad admit of bickering with each other, forcing Eva to disciple the two.

• Sibling Rivalry: The two have a bad habit of getting into fights with each other. It is usually up to Eva to put a stop to it.

Ingrid

Ingrid is a skilled doctor and a master in herbs. She used to be a nun, before an incident forced her to leave the church. Her appearance and her lifestyle in the woods led her to be mistaken for a witch, leading to the rumors of a witch circulating around Aitheria.

• The Alcoholic: Ingrid is a pretty heavy drinker, which causes problems for her apprentice Camila. This is especially ironic because Ingrid used to be a nun to a religion that forbid the people of the church from drinking alcohol.
• Sweet Tooth: She enjoys anything sweet. Camila often feeds Ingrid something sweet in order to distract her master from drinking, giving her an opportunity to strange her back home.

Camila

Camila is a young girl under the care of Ingrid. She became an orphan after being abandoned by her family, and then later picked up by her master. She learned to become a doctor under Ingrid, though Camila ended up taking care of her master too due to Ingrid's drinking problem.

• Adorably Precocious Child: She grew to become this as a result of learning how to become independent by her master. That, and she had to learn to take care of her master when the latter gets drunk.
• Happily Adopted: She is raised by her master Ingrid after her family had abandoned her.
• Heterosexual Life-Partners: She becomes close friends with Eva.

Krohwinkel

Krohwinkel is a famous food poet who travels the world sampling new dishes. Not only he is a skilled poet, but he is also able to correctly identify what kind of chef cooked his meals.

Touhara Itachou

Touhara is the head chef of Yukitsuna and the mentor of Nobuyuki. He took pride in cooking in the popular restaurant, but the restaurant started to decline after Shinobu left due to refusing to accept an arranged marriage.

Oinari is the white fox spirit who serves as the messenger for the Japanese god Ukanomitama. She can take the form of a Japanese human woman dressed as a shrine maiden. She was responsible for connecting Izakaya Nobu to Aitheria.
