On the villain's side, Maleficent's altered Storm Rider deserves a mention, being able to stand up to 2 Rebirths, and managing to push them into a corner.
The boss fights are supposed to be this.
Shun's Heroic Sacrifice in chapter 8 via an Obi-Wan Moment. To explain, despite being Impaled with Extreme Prejudice, he still manages to load and accurately aim and fire a hyper bullet and hit Nightmare dead on BEFORE she even has a chance to react, resulting in a Taking You with Me.
