I really don't see Cartman appearing in a Death Battle. The only times he was capable of fighting someone was in the video games and in the movie when he had the malfunctioning V-Chip. In the show, Cartman's completely pathetic when he gets into a fight.
But in the games, he manages to help defeat a racist legit Eldritch horror.
It's been 3000 years…Yes but that was only because it was deathly allergic to white meat.
At the end of the day, Cartman is just a child. A horrible, horrible child.

Plus they've pretty solidly depicted Cartman as a wimp who blusters more than he is capable of backing up - physically speaking - except in the video games, so he wouldn't be good fit for Death Battle anyway.

Worth noting that in Undertale, the ability to SAVE belongs only to the being with the highest Determination. Determination is literally just that: "The will to keep living. The resolve to change fate." All humans and even some rare monsters have Determination.
Flowey explains this. Before Frisk arrived in the Underworld, Flowey could Save Scum. But because of Frisk's arrival, he's lost the ability; Frisk now has the power to SAVE instead.
So Chara will only be able to Save Scum if their Determination is stronger than their opponent's Determination.
EDIT: And even then, being able to SAVE doesn't guarantee a win. Flowey was able to claim the power to SAVE from Frisk in the Neutral Route's final battle, and still lost the fight despite Save Scumming mid-battle.

My Tumblr. Currently liveblogging Haruhi Suzumiya and revisiting Danganronpa V3.1. If I remember that battle correctly, he managed to get a higher Determination Level by absorbing the rest of the Human Hearts that Asgore got and, well, while you do manage to defeat him in that battle, it isn't entirely up by your hand. You defeat him once, he starts exploding, then goes back to an earlier save at the beginning of the battle and kills you over and over. It isn't until he tries to kill to you with a ring of bullets that the Hearts overthrow his control and make him just another flower.
2. Actually, there is a scenario I'm afraid of: one where Chara can't actually, no matter what, overwhelm their opponent but their opponent doesn't have the determination to shut off his SAVE. So, Chara can't kill them but Chara can't be stopped and won't stop.

If Eric Cartman were to appear in an episode. Who should his opponent be? I was thinking Bowser Jr. could work as both are spoiled brats who both have single parents and are the trope Kids Are Cruel incarnate (Cartman feeding a kid his parents, Bowser Jr. framing Mario)
However it’d likely be a stomp in Junior’s favor due to the stuff he has (Megahammer, Clown Car, etc.). I could see an ending where Bowser Jr. horrified at actually killing Cartman with the kids from South Park celebrating the fact that Cartman died to not care about how traumatized Bowser Jr is about it.
Cartman could also go up against Stewie who also fits the whole Kids Are Cruel trope, though Stewie would still stomp him due to being smarter and having better gear than Cartman.
