No, I think it's a combination of his inherent weakness plus the revelation he obtained from studying the notes again. The real question is what Agatha will do with this clue.
I don't think it's poison, the guy dropped enough clues that what he was doing was dangerous and unhealthy for him, and what he's been taking is obviously very potent (remember how it was stored in a safe and had to be manipulated with gloves and safety goggles?).
But this still isn't going to look good for Agatha. I hope there were witnesses offscreen that saw that she didn't tamper with his drink.
I agree, this is just the unstable part of Bunstable showing. Maybe triggered by the increased use of brain capacity.

As Nomophilos pointed out, we've got all these hints about the instability of Bunstable's condition, so if he breaks down, characters in-universe will assume that he pushed himself too far. When in fact there's poison/sabotage involved.
So, the question is 'Have the Foglios figured out our attempts to second guess them?' If so, then this will just be Bunstable's reaction to a poorly concocted potion—unless that's what seems to happen until several chapters later when the poisoning will turn out to be a Checkov's Gun and it was murder after all.
