There are a lot of firsts that are possible:
Leon is the first wielded of the vampire killer;
Trevor is the first to defeat Dracula;
Christopher is the first to fight and defeat him twice in his lifetime, and did it solo, unlike Trevor.
Sonia could have easily been the first to fight him period. Just tweak her placement in the timeline a little.
Or just make her another member of the family outside of being female. She never needed to be cut.

Castlevania Legends is a superior game to Lament of Innocence I will say. It has a few rough edges, but it's actually fun to play. Iga calling it an "Embarrassment to the franchise" is ridiculous. Sonia got done dirty.
Notably Trevor was the first to kill Dracula, a Belmont before him could take the "First defeat" title via Sealed Evil in a Can.
Iga also initially axed Circle of the Moon and the N64 duology, apparently because they don't feature the Belmont or Morris families, but then added them back in.
So really, who knows what his motives were.
Here's some direct quotes from him from an EGM interview nearly two decades ago:
IGA: Hm, there are difficult problems with that. As a gamer, I think that you become one with the character, and since Castlevania has a lot of male players, it's natural to have male characters. In Rondo of Blood, Maria was a silly, cute aside, but you still had Richter to make it serious. Plus, Mr. Hagihara (the director) had a playful sense of humor. He worked on Symphony as well, and he made the telescope part where, if you pan over to the left you can see a little mouse, and also where Alucard can sit down on the chair and prop his feet up.
EGM: After Tomb Raider, don't you think a female character is more acceptable?
IGA: It's possible I guess. Although, I purposefully left the Sonia Belmont character (from Castlevania: Legends for GBC) out of the official Castlevania chronology. (laughs) Usually, the vampire storyline motifs, females tend to be sacrificed. It's easier to come up with weak, feminine characters. I'll think about it more in the future, though. It's tough to fit a female hero into the early history of Castlevania, but as you move into the modern day, females can then more easily become a hero."

There have been a lot of things about why he cut her.
The belief that a female hero that far back was unrealistic is just one of them.
One Strip! One Strip!Circle and 64 weren't added back into the main timeline, they're just alternate timelines. Presumably Legends is part of this alternate timeline too.

Judgements pre-release is where Iga confirmed they take place in an alt timeline. Aeon even states as such in-game iirc.
at least Maria's breasts jokes are So Bad, It's Good for how uncharacteristic they are. Also we got more Grant, which was nice. Empty Tome also got a fantastic rendition.

Sonia began life as "the first Belmont." That title got usurped by Leon who then became "the first Belmont," making Sonia obsolete, at least as far as Konami is concerned.
