It is true that Empire being human only in Original Trilogy was probably due to budged, EU writers however turned it into a part of worldbuilding. They also estabilished that they are willing to make exceptions for individuals like Inguisitors, Thrawn or this person

Aspyr has announced via Twitter that KOTOR II's restored content DLC for the Nintendo Switch port has been cancelled. As compensation, they are offering purchasers of the Switch port (as long as proof of purchase is provided) a complimentary game key for one of a select few Star Wars games.

Of all the strange and weird things that happened in Legends, I almost forgot that there was a Star Wars: Clone Wars comic tie-in where Yoda carried a big box that contained a giant mini-gun that he used to waste battle droids in a instant.
Obi-Wan is wondering how Yoda became so uncivilized...

To be fair to Yoda when it comes to war, it is a game where even if you choose not to play, your still playing the game.

If they fight, it'll be done on Palpatine's terms and they compromise their principals if they don't fight, then the mass death across the galaxy will weaken the Jedi and they compromise their principals.

Sadly while the jedi could see through the darkness that Palpatine had made, they couldn't see through the light that Palpatine had made to hide himself in.

Plus with how he set board, by time of clone wars Chaos would be ensured even if he was found out early in clone wars.
Without Palpatine around, the war will have ended quickly and the Jedi will have recovered in no time.
This is not the first war the order fought.

It is first they founght in 1000 years (tehnicaly) and Dooku is still there with Galactic Superpower and Droid army. He could easily call bulshit on “Palpatine is Sith Lord” given how he seems to be able to hide Confederacy atrocities from generaly populace.
Thought how war would look like we can only speculate.
Empire Strikes back does outright call Yoda a great warrior, even if war doesn't make one great.
With regards to the Clone Wars, I think the Jedi basically had little choice in the matter.
The Separatists were a real threat.

I doubt Dooku could have won alone.
It is implied, at least in Legends, that the only reason the Confederacy lasted that long is because of Palpatine's inside information and him sabotaging the Republic.
The plain fact is that those chatty droids and their corporate masters are no match to the Jedi and the Clones.

IIRC the Separatists actually did stand a decent chance of winning. At least this is what a Tactical Droid deduced.
One of the Tactical Droids refused to shut down because it realized that the war was still quite winnable (or perhaps even that they were winning) and assumed the order was some kind of trick.

The whole 1000 years of peace thing gets less and less accurate the more we get stories that take place in between that time:
At this point, it’s probably best to recontextualize it as it having been 1000 years since there was a war so large that it engulfed the entire galaxy, a la it having been decades since there’s been a World War, but there’s been scores of smaller scale proxy or ideological wars in the time since.
We know they had what is effectively a war with the Nihil, at least. And whatever the heck happened with the Mandalorians and the Zygerrians.
So I don’t think it’s necessary wrong to consider the Jedi Order as an organization experienced with war.

Yeah, keep in mind that Dooku was also sabotaging the Seps, so a claim that the Republic would've just won in a fair fight is entirely impossible to claim one way or the other.
I mean, the Empire is meant to be a bunch of Nazis and Lucas had Chewbacca as an escaped slave in his notes.
So it was conceptually always that way.
