That's the core of it, the really facepalm-inducing part for those trying to lose weight being that the body adjusts resource use and processing efficiency to stick to a baseline.
Example: Alice and Barbara are identical twins. Alice runs marathons on a regular basis and trains constantly. Barbara's primary hobby is binge-watching 90's TV series. Alice and Barbara burn roughly the same calories during a given day, but Alice sleeps more and Barbara always thinks it's too hot.
If Alice breaks her leg and Barbara stops eating chips, Alice will gain weight and Barbara will lose weight at first, but fairly soon their calorie I/O ratio will have started to shift back to the baseline set by their shared genetics.
Hence why there were fat people in medieval villages where the diet was mostly weak stew, and today you have people that can sit on the couch all day eating potato chips and never break 100lbs. (Those of us in the former category can take solace in knowing that the latter are screwed in the apocalypse.)

Alice, Bob and Carol eat a load of chocolate and In-Universe, they get fat over a few weeks. Except, Carol, that is, she's a Big Eater but never seems to get any fatter, no matter how much she eats.
In one episode, Satan tries to get Carol to eat and eat, but is amazed she doesn't get any fatter and he keeps ranting about it.
Is there a trope for where someone should get fat, but In-Universe never seems to?
