Also, are Ax-Crazy and related tropes for Flandre really Jossed? From the latest chapter she sure seems to be somewhat dangerous and volatile.
She's definitely mischievous (she's GLAD Remilia suspected her as the culprit) and blood thirsty (more than happy to destroy Meiling after she thought Meiling was the culprit) but at least according to the note in the first sentence of the ax-crazy page, "Being Ax-Crazy usually implies that almost the entire substructure of sanity is gone". She did wait until after Meiling was evil (Possessed, but she didn't know that part), after all.
I'd say that with her constant menacing, she loves giving off a picture of being ax-crazy but so far has yet to go through with it. Which is pretty much how most youkai in Gensokyo seem to function these days (Pretending to be all evil and bad-ass and scary "like in pro-wrestling" per ZUN, but in reality, as Reimu once commented, just being really eccentric people). Things like how she could actually break out at any time if she really wanted to yet Patchouli freaking out in Eo SD when she DID get out implies the whole thing is just a game and act among everyone, Patchouli included (which again, is how most of Gensokyo tends to go). You could argue that's why she just spooked Reisen in the Inaba manga when she could have done far worse, etc (for whatever canonicity that's worth).
So I guess the question of whether or not Flandre is ax-crazy can be answered with "She pretends to be.", just like most other Gensokyo denizons pretend to be things.
At most, Flandre allegedly (allegedly. Unreliable Narrator there) gets overexcited when it comes to her food and destroys it if it isn't prepared in the form of deserts instead of like, a whole human.

I think you've hit the nail on the head. Reimu acts the way she does because that's all she knows; and considering that she wasn't even raised by humans, her quirks as a person could be said to be the result of having what it means to be "human" taught to her through the filter of a giant turtle.

Reimu really is a simple, optimistic and strange character within the series. She really is an ambiguously innocent girl who is just naive about certain aspects of her career and she can be a little scary.
"We are just like Irregular Data. And that applies to you too, Ri CO. And as for you, Player... your job is to correct Irregular Data."That's a realy good assessment of Reimu's character.
However, it can't really be overstated how a shrine maiden not exterminating youkai on sight is a bad look among most of Gensokyo's human population, which Reimu is well aware of, even if she is a bit extra about it sometimes. Few if any human villagers are gonna see Reimu bullying a youkai and be like, "Hey, don't you think you're going a bit too far?"
^ Soundtrack on that is pretty decent, stage challenges though seem a tad unimaginative at times.

So either that ability is pretty open-ended, to the extent of "someone or something could conceivably use this place as a dwelling," or else Suika's gourd is already occupied by tiny, tiny beings staffing her miniaturized brewery.
Or she made it all up in a successful attempt to prank Suika into pouring alcohol into her own eye.
