How easily available are Kalos Pokemon in XY? I haven't played it since forever but hopefully the availability is not as awful as Johto and Alola.

Get Out of Our Home.I haven't played the Gen VI games because I hate the Fairy type so Arceus-damn much, so I can't really help you there. There should be a few other tropers who can help though, so just be patient.
That being said, here's a Hydreigon for a villainous team leader that is tailored towards taking down Fairy types despite a 4x weakness. Level 66, knows Sludge Bomb, Flamethrower, Surf, and Flash Cannon for its moves, and is ridiculously fast but has low physical attack power. Only real problem? This is an illegal moveset because Hydreigon cannot learn Sludge Bomb at all. Then again, NPC trainers have cheated by having underleveled Pokemon and illegal movesets since the first Generation so it's not really a surprise to some people.

If anything, I do hope that Game Freak introduce more viable Poison-types. Alolan Muk initially gains traction in the early SM, but it fell way down later on. Toxapex was amazing as a wall, but it lacks any offensive pressure and support that would make it stand out in Doubles. Naganadel was close enough, but it was either too overwhelming for OU to handle or too underwhelming for DOU.
We do have a ton of viable Steel-types. They are indeed good Fairy-type counter, but half of the Tapu aren't weak to Steel.

OU even has got at least two interesting Steel-types on Gen VII: a Mighty Glacier and a Glass Cannon.
Naganadel is an interesting addition but yeah, I hope we can see more viable Poison-types on the offensive side.

ANYWAY; Golem, along with Rhydon, originally were pretty solid contenders in Gens 1 & 2; it had its flaws, but it worked for what it had to do. Gen 3 onward sadly saw it be Overshadowed by Awesome by Rhydon as the later gained a much more solid niche and an Evolution on top of it.
Gen 7 gave it a good niche of being able to trap and kill Heatran, but that's all it really had going for it.
A lazy millennial who's good at what he does.It's more that Golem's more offensive nature compared to Rhydon eventually becoming less important in later generations in one way or another (Its slightly higher speed doesn't matter anymore and Rhydon's Eviolite boost). I'm more surprised that Golem always runs Explosion throughout the generation.
That's because Golem doesn't have anything else to offer, offensively, in such a general way.
The only way I'd be okay with Pokemon going open world is if it were an MMO or a game with all the regions, and in the case of the latter, it was only semi open world. I might not like when games are too linear (See the Unova game.) but open world is too far in the opposite direction for me.

I don't remember it being too bad, but it does have the smallest amount of new Pokemon. I think almost every route or new area has at least 1 new Pokemon there. It is important to remember that the regional Dex is fricken huge, tho, with around 450 mons total.

I've been preplanning my team a bit for Y, mainly this means I have two lists.
One of Pokemon I definitely want on my team, and another of ones I'm still deciding on.
It's hit me that Kalos has very few new or old Fly using Pokemon. Only 3 new lines (4 if you include Yveltel).
I used Talonflame in X, so I wanted something different, but there aren't a lot of options, since I'm trying to keep my team about 50:50 Kalos Pokemon to others.
