I am sure this has been asked before but what is a good way to make Minecraft fun again? I feel like I burned myself out on it. I once played it for 2+ hours daily and now I go to play it and just can't get into it like before, even after the recent updates.
Have you tried mods? I swear by 'em.
Yeah, mods and modpacks are what makes the game nowadays. If you don't feel confidant in modding yourself, you can always download mod launchers like Feed the Beast or Technic.
Or if you really just want one or a couple specific mods, you can try Curse. (but honestly you'd be better off installing your mods manually at that point)

I've seen you in the Pokemon threads, so I guess you'll probably like the Pixelmon mod. Right now, they're working on fixing bugs all over the place, and adding more pokemon, making new models for already implemented pokemon, gyms, and a berry growing mechanic.

Wow. Seeing the advancements that are being planned for the new version, I'm already feeling discouraged from trying to complete them all, something I'd never felt with the old achievements. Some of them feel more like That One Achievement than any of the achievements ever felt, and I'm including "On a Rail".
"How Did We Get Here?", in particular, I'm not even sure if it's legitimately possible to earn it, considering it requires having Mining Fatigue and Levitation at the same time. Those two status effects are only inflicted by a mob who only lives at the bottom of the ocean and a mob who only lives in a floating island in the middle of nowhere, respectively. And then you'd have to be inflicted with Wither at the same time, which requires a mob which is found nowhere near the two aforementioned mobs, or another mob who is summonable but destroy everything close, including those two aforementioned mobs. Yeah.
And there's also "Serious Dedication", which would be more a Goddamned Achievement if that trope existed, but anyway. You must waste two diamonds on something you would never think of crafting if it wasn't because of the achievements. And that's not the end: you must use it until it runs out of durability, which will require a lot of time (it has 1562 uses) unless you till every single dirt block you see or use it to hit mobs.

Because supposed the game was patched for the mobile and Win 10 versions, the "Discovery Update", with...features we already have minus a cash shop.
Is the original PC version no longer being developed for? Or is there some difference between PC and Windows 10 versions?

Regular PC version still exists and is getting an update soon.

I need to figure out what to build by this stronghold. I don't yet have a major project for the plains biome. The Wandering Castle goes in the normal forest, Betrayal Manor goes in the roofed forest, my tower goes on the coast, the Egyptian city in the desert, and the future new castle in the mountains.
I wonder what to build here. Maybe the old canal city I've worked on/aborted a few times. Or maybe import that old Krikbride asylum I was building.
Or maybe that should go in a creepy birch forest.

Better Together Update includes Cross-Play between Nintendo Switch, Xbox One, Pocket, VR, and Windows 10 editions. No Playstation 4 as Sony refused.
All of these editions will be considered Minecraft, while the standard PC version will be considered Minecraft: Java Edition.
Independent servers will be added to Minecraft (console, mobile, VR).
Super Duper Graphics pack, boosts to 4k, better lighting, better graphics in general, coming in the Better Together Update.

It has, yes, but will it from now on? It's not Minecraft, the game available to the masses on console(and Win 10?), it's now Java Minecraft. Like I said, do any of the news points on that page apply to Java Minecraft when it says Minecraft?

Going on a Quest: to find the only biome I've never actually seen in the game, the mushroom.
Ok, I have technically seen it—a single block in one of my first worlds back before villages were introduced. I was sailing around and saw a mooshroom on a tiny island, further investigation revealed a single discolored grass block.
It's time to go back to that world and get that block, because I've never seen it anywhere else.
