That doesn't work. It's about hating the character for being a stereotype, not hating a person for being "too gay". And that construction has uncomfortable implications.

I don't think a new Scrappy trope should be created when The Scrappy itself is currently in Long-Term. Since there's no "Minority Scrappy" page, can Ethnic Scrappy be used?

A person of different ethnicity who is The Scrappy for reasons having nothing inherently to do with their ethnicity is just The Scrappy. There's no need for a separate trope any more than we need a trope for heroes who have brown hair.
Ethnic Scrappy is when the audience dislike is directly tied to the fact that they are also a token.
