I'm doing Hindu NPC from Bali for my classic World of Darkness setting. Is there any male deity/hero especially known for vanguishing monsters? Because he is specialized in the assassination of supernaturals, especially vampires.

Ooh, that's tough. Quite a few people are well-known for monster-slaying. A great amount of them are avatars of Vishnu, but definitely not all. Perhaps, you should look into Rama, Vishnu's #7 avatar, for inspiration.

Kalki, Vishnu's tenth avatar, appears at the end of the Kali Yuga (the current era), to abolish darkness and decadence. He works very similarly to Jesus' second coming, and it's likely that some of the events of Revelation were directly taken from his story. After he appears on the seen, the universe is destroyed. A new universe soon begins, starting with a new yuga (era), which is supposed to be a new golden age. Presumably, there will be a new set of avatars.

Sure. I'd addressed some of it, on the first page of this coven, but I'll say some more. I felt very disillusioned with Christianity, regarding its literalistic views on its creation stories, it's insistence that there is one true faith, and the notion that Yeshua is regarded as a God in Human Form. I've long seen the first chapters of Genesis as metaphors, I trust reject absolute religious truth, and Jesus struck me as an ascetic preacher who had revolutionary and egalitarian tendencies. All of this, and more, contributed to my leading the faith. It took a hell of a long time for me to arrive at an answer to my religious crisis, because, while I knew that I believed in some sort of deity, I didn't know who that was. So, I did a ton of research, and I kept coming back to the eastern religions, especially the Indian ones. I thought about Buddhism or Jainism, but that didn't feel quite right. Hinduism just kept calling back to me, and I eventually knew it to be the answer. It agrees with my views on the universe, along with the idea that things like salvation are more spiritual than physical. Also, I've never really believed in Satan, and my views on morality are much more complex than the Black-and-White Morality of the church. So, Hinduism's brand of karma made a lot of sense, as did the less-literal view of Hell. There were a lot of factors, really. But those are some of the basics.

So, what's your main substitute for beef? I know those who reject pork tend to be into lamb, but I'm curious what Hindus eat instead.

I normally eat whatever other meat is on hand, or veggie burgers, but there isn't really a consensus. As Hinduism is a mixture of a large number of different ideas, if one follows a certain interpretation of ahimsa, he/she doesn't even eat meat. As such, there are two main views: "Avoid all beef", or "Be a lacto-vegetarian."
