Hitokiri in the streets, daishouri in the sheets.I don't see any of the ashes hinting at her name. I don't see any hint of her name in any of the wikis either, except possibly a name of a family member.

I just made progress on my main Dark Souls 3 character, beating Profaned Capital and the Dancer.

Daughters of Ash mod sounds cool.
Beat her on the first try too. And after I forgot to restock my Estus at that.
The fight is actually kind of easy and fun if you approach it as if you were dancing with the Dancer, if that makes sense.
Disgusted, but not surprisedI didn't have much problems with her first phase and I got her down to 10%-20% health on the first try, I kinda experimented with different approaches from then on and I was probably just into double digit deaths before I actually took her out in a Mutual Kill. I wish I'd finished her cleanly, but hey ho. Didn't take me super long though, she's not that tough.
Dragonslayer Armour however, he's a big boi with big boots. Went through some different equipment loadouts trying to work out what's best against him (sword and board build) and I think I ended up swapping out my Dark Knight shield for a Lothric Knight shield. Still on his phase 2/3 somewhere.

Just make sure you don't get too close to the edges of the bridge. I also used a one-hander and shield setup, though I used a Refined Mace instead of my Refined Longsword since he takes more damage from Strike.
Really, the only bosses that gave me a lot of trouble in DS III were the optional ones and the DLC ones. Sure, I beat Champion Gundyr on the first try, but I had to summon the Sword Master to do it.
