Dragon Quest. The whole series. The word simplicity when it comes to games makes me think of that series right away. It's simple plot wise, aesthetically, and gameplay wise. It's stayed largely the same.
I suppose you could say it has a sort of elegance to it.

Because holy hell that game was fucking awesome, and really simple. The rocket pack being an excellent gimmick, as it's a unique way of getting around and also integrated into basically all the situations you'll encounter. There are no powerups to fiddle with, it's just you, your rocket, and your sword the whole way through.
Love it to death.

One of them started off as large elaborate games, but features were taken off one by one until only what's essential to the game is left.

Not a lot of games I would call elegant, out there. Not many that I've heard of, anyway. And a problem with too much elegance is generally a lack of depth :/
