Well, technically the versions of the myth that describe the figure as a woman would count as Gender Bending if the other version(s) that say they're a man are more popular/widely accepted as the "standard" version. That's the case with Jack the Ripper, for example. Basing your take on the myth on such versions, while of course qualifying said take for Shown Their Work, would pass on the Gender Bending status to it as a result.

IIRC in the legend of her duel with Watanabe no Tsuna at Rashomon, which is the most famous story about her, Ibaraki initially appears disguised as a beautiful woman.

tbh I feel like Requiem is just something they had made just so they could get something to fill in the shelves as Narita recovers and Case Files wraps up next year

Edit: Speaking of Gender Bending, I really feel they've been fading away from the franchise lately. Not that I'm complaining, mind, made for a good story once, but at the very least the time of FGO's release (though I would argue it already qualified since the first Extra game), it pretty much had turned into an unnecessary gimmick. While I obviously can't speak for some of the other work I haven't read (which is most of the sub-series at this point), I don't think any new gender bent Servant was released since at least Shimosa (and depending on how generous you feel about the whole Alternate Universe thing, even that doesn't count).

I believe we have one potential genderbend still left. Merlin from Arthur's timeline is a female. If that universe comes back, we may see one final genderbend. Not unlikely since she's kinda anticipated last I heard and DW likes money.
No Danzo definitely counts because they've made a point of connecting her to Kotaro and expanding their relationship in later stories
EDIT: Narita ran into some health issues because he was juggling too many series and it took a toll on his health
it's just that it got to the point that he had to be hospitalized either last or this year

If it's in the myths, it doesn't count as Gender Bending. In fact, in those cases it can even count as Shown Their Work, as you generally would have to dig a bit to pick such obscure details.
