Not uniquely Canadian. Australian also uses "colour" and will accept either the "-ise" or "-ize" extension to turn it into a verb.

American English spelling is largely based on Noah Webster's "corrections" of various spellings.
Canadian English uses the Commonwealth spelling for some words and Websterisms for some other words, and the spelling of "colourization" is a uniquely Canadian spelling as it combines the Commonwealth inclusion of "u" in some words ending in -or and the American use of "z" instead of "s" in words ending in -ise/-ize and their derivatives.
