Capcom was never going to do that either, especially not in the mid 2000's when RE 5 came out.
I'd argue the better option would have been just to have Sheva not disappear from the gameline afterward.

They were half pretending Sheva didn't exist before they were even done with 5. The Gold Edition cover only has Chris and Jill on it and none of the DLC aside from some of the Mercenary costumes lets you play as Sheva at any point.
She's probably never going to show up again, but to be fair to her and Capcom, that's true of around half the supporting protagonists they've introduced since 3.

I'm not seeing the problem with Sheva Alomar & quite frankly the whole thing racism with RE 5 is still incredibly stupid to this day.
Normally I wouldn't give Capcom the benefit of the doubt recently but after Resident Evil Revelation 2 & Vendetta, I just wouldn't be surprise to see him. Of course, I'm pretty sure they'll do something stupid with him.

EDIT: I also forgot a character who survived and was never seen again. D.I.J, the diary-keeping mouse from Code Veronica who escaped on Wesker's submarine. I legit forgot he was a thing until I checked the trope page.

TV Tropes's No. 1 bread themed lesbian. she/her, fae/faerI want to buy the RE 2 remake but I'm worried. It seems kind of dour and boring with none of the camp charm of the original game.
They're probably making this remake to try and throw out what didn't work in the original and to make it an effective, terrifying experience for modern gamers. If the camp charm of the original is what grabbed you then it probably isn't going to be worth buying.
I'd say go with your gut. Just don't make the decision based off of what the reviews say, or go and drop 60 bucks on it out of brand loyalty.

Resident Evil isn't serious. The best game in the series is about rescuing the president's daughter from the most inept villains in the universe. Camp is a core part of the series identity, even previously darkest game in the series, the Resident Evil Remake.

I may or may not have brought this up in this thread before (I may have brought it up on another forum in fact), but I'd like to see Jill and Claire star together in a game.
If you count that non canon gameboy game, even Leon and Barry have been in a game together, but Jill and Claire have apparently never met on screen.
