Every monster kill counts, with "monster" also counting the various kinds of Guardians (you can use Ancient parts in elixirs, even). I don't think the non-monster animals (wolves, foxes, goats, etc) count towards it, but I'm not sure on that.
As for creative Stalnox kills, I haven't tried it myself but I believe the 'nox on the island directly to the east of Castle Hyrule can be killed similarly to the one in the NW corner of the map, except punting the eyeball into the river instead of off the edge.

So far my playthrough has gone really well, since I'm not playing it as a traditional Zelda and trying to engage with it as its own game.

Just finished the Giant Horse side quest. Had to ride past a bunch of Lynels, but fortunately I had the Lynel mask to help with that.
Then after completing the quest I registered it.

As I recall, I avoided the Lynels by riding the Ganonhorse up the slope and around behind that big mesa that marks the eastern edge of the Gerudo Highlands.

I decided to give Vah Medoh a try, and my sword broke before finishing off the Blight. Fortunately, it only took a few bombs thrown at it to finish it off, but between that and getting warned my bow was about to break (as I've said in the past I'm an unrepentent arrow whore, and I was milking the Bullet Time mechanic for all it was worth in shots to the eye) it was kind of annoying.

I chose to go after Medoh first because apparently Revali was also an arrow whore, with 100 regular arrows and 5 bomb arrows. (And also two other bows besides the Falcon bow you're initially equipped with [a Duplex bow and a Phrenic bow], but I didn't realize that until looking up the fight just now.)

So you lose the bulk of your weapons, and I'm guessing whatever champion powers you had besides whatever said champion possessed when they fought the Blights then?
Which means you could easily end up with a broken weapon and no way to fight.
One Strip! One Strip!Which is why you bring Urbosa's Fury. You keep all those abilities. It's area of Effect, so hits are guaranteed, and three hits bring any of the Blights down to half health. Recharge that, and the next three hits will outright kill it.

Bring Urbosa's fury. I'm not sure of Vah Ruta is even possible without it. You have to defeat a flying enemy with like three arrows and an incredibly fragile spear.

- Vah Ruta (Mipha): Ten regular arrows and a Silver bow.
- Vah Rudania (Daruk): Five ice arrows and a Knight's bow.
- Vah Medoh (Revali): 100 regular arrows, five bomb arrows, a Falcon bow, a Duplex bow, and a Phrenic bow
- Vah Naboris (Urbosa): No arrows or bows.
You do get all of your runes and Champion powers, though, which helps.

Wake me up at your own risk.Windblight doesn't. In fact, Windblight is easier if you can fly, since his tornado requires ground to work and you can just fly above the laser reflectors. The only thing to dodge is the normal shots, which are easy anyway... yet Revali still managed to get killed.

Maybe Windblight threw a big rock at him while he was in the middle of nocking an arrow? Like it purposely left itself open knowing he'd arrogantly think he had a clean shot and then just clubbed him in mid attack.

Do Stal- kills even count for the Blood Moon counter? I was under the impression that randomly-generated enemies like them and Yiga assassins wouldn't count since they're not part of the total enemy pool.
