For fun I would like to see Peter Stormare as Low Key Lyesmith.
It's funny that the first two selections for Wednesday were Brian Cox and Anthony Hopkins. Two of the people that played Hannibal.
To me, both of those actors are too outwardly menacing, and not because of the afore-mentioned Hannibal connection. I always saw Wednesday as the larger than life, fast talking, TALK IN ALL CAPS sort of guy. Thus, there is only one possible selection.
BRIAN BLESSED.

Mads Mikkelsen as Wednesday.
I've always imagined Mr Wednesday as Bryan Cranston.
Mads Mikkelsen as actual Danish Odin at the end.

Garrett Morris for Anansi. Yeah or nay?

You fell victim to one of the classic blunders!Oh wow. He looks perfect for the part.
He even seems to wear a Nice Hat in all of his photos.

Anthony Hopkins might be a little on the nose considering his role in, say, Thor?
Not Three Laws compliant. That Odin is nothing like this Odin. This Odin is not very Anthony Hopkinsy
You fell victim to one of the classic blunders!I was thinking Patrick Stuart.
Trump delenda estLevar Burton for Anansi.
| Wandering, but not lost. | If people bring so much courage to this world...◊ |Excellent. I'm glad they aren't whitewashing him.
Cool. Seems like a good fit.
I have no idea if this would work, but I always kind of pictured him as Donald Sutherland.
Oh God! Natural light!I always figured Wednesday to be a bit taller/bigger than that physically but lookwise I definitely second Donald Sutherland. He could definitely pull off the air of menace whilst remaining affable at the same time.
"These 'no-nonsense' solutions of yours just don't hold water in a complex world of jet-powered apes and time travel."Sean Connery.
You fell victim to one of the classic blunders!Ian Mc Shane, perhaps. Also that man who's playing the king in Galavant whose name I can't remember at the moment.
Do you mean Timothy Omundson (spelling?) or is there another king?
I really like Sutherland for the role but he may be a bit too old (ditto for Connery who is definitely too old).
Speaking of good choices but too old, the actor Richard Chamberlain was in this one episode of Hustle as an American master con artist and he looked (and acted) exactly like my mental image of Wednesday◊.
Edit- Incidentally, Chamberlain looks a lot like Sutherland there, which enforces his being a good choice.
Edit2- Was thinking of wrong actor named Timothy. No wonder he didn't look right.

Timothy Omundson?
You fell victim to one of the classic blunders!I was thinking more of Sutherland fils
Trump delenda estNot one that immediately came to mind for me I don't think but a great casting.
Edit- Surprised he didn't come to mind because he's perfect. Has the combination of charm and menace and he looks younger than his age which makes it easy to show Wednesday looking healthy or ill depending on the amount of worshipers/sacrifices he has.

Yeeeeeeessssssss.
More Ian Mcshane is always a good thing.
John Hurt at his most grizzled for Odin.
