I’ve thought about it before and think it would depend either on person creating it or what counts as Shendu’s powers.
The Rat Talisman is the biggest Imagination-Based Superpower in the show, not as flashy as rabbit, ox or pig but definitely unpredictable. I don't recall Shendu demonstrating the power independent of the talismans, but as said any figure brought to life comes with their assumed powers. Imagine one of the full scale Transformer statues made for the movies.

It’s shocking how he went missing in January and wasn’t found at all until now.
He was apparently a very good mountaineer who probably knew a lot of wilderness survival skills, maybe that's why they didn't want to officially declare his death until they were 100% sure?

I think that was just a formality. His family had already accepted he was gone after two weeks. Logically there’s only so long someone can last without food and water.
Wouldn't an experienced mountaineer know where to get that if he were lost in the mountains, though? That sort of thing is what I was getting at there.
Maybe but those can be traced, meaning if he had been gathering food and going to water sources at length he would’ve been found a lot sooner.
