As for Paul, this is the guy who's actually managed to beat Kazuya in a fight, and also defeated Ogre as well. I know he's been placed in permanent Butt-Monkey tier, but he deserves better.
One Strip! One Strip!I honestly think Jinpachi has a chance. Kazumi was speaking to someone in the Tekken 7 trailer, and I think that was him. I'll bet they can come up with a Tekken-enough excuse to bring him back to life.
Plus they gave him a wicked cool moveset in Tekken 7.
every little word and every little stepI think I read somewhere that Ganryu is one of Harada's favourite characters. And he's the only representative for sumo. He'll still be there.
Plus he's got a growing presence in the universe with his Chanko Paradise restaurant. I really liked playing as him in 6, but they changed some of the effects of his moves in Tag 2 so that I couldn't do my favorite combo with him anymore, and I sort of lost interest.

Wang died in his Tekken 6 ending too. I wonder if his death will stick, since he is over 100 years old. If he does die though, I doubt it will be after beating Azazel, they'll come up with another death scenario. Then again, if Jinpachi comes back, they could keep Wang around for one more game.
I'm not sure Zafina will be back. In her ending, she's sealed away with Azazel in an eternal battle. Even if her ending isn't canon, her story is closely tied to Azazel, and with him gone, she has no reason to stick around besides foretelling prophecies and such, and that can be done by other characters.
For Tag 2 characters, Prototype Jack and Combot are two more safe cuts.

The only thing that's canon ending wise is Scenario Campaign and maybe the King endings. All of the others are mostly bunk(clearly) but may have things here and there put into their story in T7. Paul and Law getting blown up so...stupidly? Nah..

I could still see at least Marshal being collateral from a botched attempt to kill Steve, since Forest can replace him and he'd have a perfect motivation for entering the latest tournament.
Trust me I wouldn't put too much thought into any of those endings.....

Edit: She's also one of the few supernatural characters (with Ogre being the other) who is not tied to the Mishimas in some way.

Christie brings the fanservice, though. She got in over him in Street Fighter X Tekken, she's the one newcomers know, and she briefly replaced him entirely in 4 (you can unlock him in that game, technically, but canonically he never entered KOIFT 4.)
Baek was also brought back during 5's explosion of characters - he debuted in 2 and was dropped in 3 (it was even hinted that he'd been killed by Ogre like all the other MIA subbosses), only to resurface with Bruce and the rest of the gang with no explanation. He has his fans I'm sure, but he's not at all iconic like Paul is.
