Are you guys kidding? Almost every Nintendo series represented in Smash has a ton of iconic enemies that could've been in the SSE (and could be in its successor).
Zelda has not only Bokoblins but Octoroks, Moblins, Wizzrobes, and Gibdos. Kirby has Waddle Dees, Waddle Doos, Bronto Burts, Blade Knights, and Sir Kibbles. Donkey Kong has Kritters, Klaptraps, Klumps, Klobbers, and Zingers. Metroid has a whole wealth of enemies whose names I don't know because I'm not really a Metroid fan. The list goes on. And like 90% of the enemies I listed could easily play the role of one of the original Subspace enemies or do something totally new.
As for the settings... obviously, the ones we got are a little dull but honestly, I think the music saves them. Step: The Plain and Step: The Cave are pretty great renditions of the Brawl theme.

The thing that bothered me the most about SSE was the unmoving background, it was distracting. Also the floatier nature in Smash and the compact level design in some places doesn’t work

So you know I was specifically talking about what mook models were already in Brawl, right?
Of course I can name more than just Bublin. But thanks for reminding me about Waddle Dees, I forgot that Dee Dee Dee had them for his side-B. On top of what Pokemon were in Brawl & the Bulborbs. I also don't see why they couldn't just recycle the Redead & Ocotorok back in Melee.

In fact, Dedede did use a small army of Waddle Dees in his earlier cutscenes, most notably when he stole Wario's trophy platform.

Looking back on SSE, I have to wonder if any the things I wanted back in SSE were even possible to begin with.

We're getting to the point where there aren't all that many characters left that I'd personally consider to be 'must-haves' as a Smash fighter, though I remain hopeful for Sora and Crash Bandicoot.
