I'll start with the reasoning. The nature of the Franchise is to find, capture and train the local Mons to battle. To that end it would make sense to have ways that distinguish them as charatcers, as much as possible.
The Natures are the more apparent. They role in fleshing out a Pokemon seems to be giving them a hint of personality. A pokemon with a Quirky Nature might be a Cloud Cuckoolander, have weird tastes or prone to sleeping. a Pokemon with an Adamant nature would likely be hardheaded and set in their ways. A Pokemon that's Modest would likely be Humble or unwilling do shameful things. A Timid Pokemon would be a Shrinking Violet or Fragile Flower, etc. Those are just examples, but my point is that the Natures are supposed to hint at a personality.
I Vs are less apparent, like Natures they also are supposed to hint a personality but only 1 stat per Pokemon does this, on top of that they seem to work like Genes.
The problem is that both are tied into the battle system. Therefore Min-Maxing would mean that most of the natures are useless (even for Jack of All Stats like Mew or Arceus, as types favor a given stat and tactics more often than not). If you're a storyteller, diverse and unusual personalities would be useful because it is a part of Character Depth. In Competitive Battling in this game, it instead becomes a hindrance. Of course its not like you can ever see the pokemon's personality in battle anyway
It wasn't initially this way however. For one the correlation between battle stats and personality didn't not become apparent until people took a look at the games code, and likewise, Pokemon wasn't intended to be an esport. But things happened that made Pokemon's Wifi battles an esport of sorts and ingrained the idea that Min-Maxing is necessary in the collective unconscious of the playerbase. And the breeding mechanics were changed to accommodate this.
For this reason, I find a fanfic that Deconstructs competitive battle and the breeding mechanics to be an interesting take, but also for this reason I am glade that Hyper Training is a thing (at least as long as the change only simulates max I Vs...and persists into later generations) as I feel it is a bit more ethical method of getting statistically better pokemon from an in-universe standpoint.

Everstone passes nature, Destiny Knot makes it so 5 I Vs are inherited (out of the 12 I Vs from both parents). Oh, and hidden abilities are only passed by the mother unless breeding with a Ditto.
It is kind of a good time killer while you are doing something else: Toss something with a 6 IV Ditto, get 5 eggs, hatch them to see if you get something with plenty of perfect I Vs, then repeat until you have what you want (well, after getting the nature you wanted, Nature is easier to get what you aim for).
It helps that theres an ability that almost ensures you get the nature you want (You just have to find it first)
Or just toss an Abra with a Ditto and hatch eggs until you have a Synchronize Abra of each useful nature (which pretty much boil down to everything but the neutral ones and the ones that raise a defense and lower another defense, with an emphasis on having Adamant, Modest, Jolly and Timid ones).
I managed to get Dittos with Adamant and Modest natures, the only ones that I care about, so if I want to breed something, I mix it with the respective Ditto with an Everstone, then give the Everstone to the new breed while I mate it with a perfect IV Ditto.
I started caring about EVs in X and Y, then started caring about IVs in Sun and Moon. I managed to get lucky when I found a foreign shiny perfect IV hacked Ditto up for grabs on the GTS (for a reasonable demand).
You should care about Jolly and Timid as well; extra speed is sometimes far more noticeable than extra attack: A single extra point on attack doesn't have the noticeable effect an extra point in speed has.
That would explain why people demand them a lot.
Unless that Pokemon is a Mighty Glacier.
All this talk makes me want to boot up Moon and breed a Perfect IV Popplio to trade into my copy of UltraSun once I get my hands on it.
Of course, I'd have to get a Perfect IV Ditto first and that might be a problem. I should also probably complete the Pokedex before bothering with that stuff. Really wish there was a really good way to grind so I can get all of these evolutions.

For a game that's for kids, there's a ton of obtuse nonsense you have to learn to play it at its finest.

Put all the Pokemon you need into Poke Pelago, then take them out and level them up (or use a Rare Candy) when they reach the level they need to evolve.
Is there a reliable way to get more Rare Candies for that? I think I have like... fifteen or so from the story that I never actually used (I usually save them for right before the Elite Four but I ended up not needing them).

I have a Pickup team of Linoone, Gourgeist, Dedenne, Pachirisu, Ambipom, and Diggersby to get me whatever i desire, including rare candies and destiny knots.
These 6 are the only pokemon as of Gen 7 that are fully evolved with Pickup.
