I mean, they used an accordion in "Come with Me Now", alongside a pedal steel guitar. We need more accordions.

It's just a lead single (1000 Forms of Fear comes out in July), but if you haven't already heard it, she did "Elastic Heart" for the Catching Fire soundtrack.
I like the intricate instrumentation and summery feel of "River Bank" by Brad Paisley. It's also a different kind of melody for him. There is a way to make good, likeable "bro-country".
Wasn't released in the Summer, but it fits the season well enough, so I'm counting it.
