Shortest: "Der rufet den Elias", Movt. "61b" from J.S. Bach's St Matthew Passion as recorded in 1993 by the Amsterdam Baroque Orchestra under Ton Koopman, 3 seconds. (There are several other "movements" on that recording which last under 10 seconds thanks to its somewhat eccentric way of splitting the recitative passages into tracks on the CDs.)
Longest: Symphony No.22 in B minor (in one movement), "Symphony-Ballade", by Nikolay Myaskovsky as recorded by the USSR Symphony Orchestra under Evgeny Svetlanov, 36 minutes 23 seconds. Longest individual song is 'Atom Heart Mother' by Pink Floyd at 23:44, although individual pieces of music split out over multiple tracks can run to longer length's, such as the Lush medley on Orbital's Brown Album at 28:43.
The shortest track is the 'Windows Notification Sound' at 0:01, but the shortest actual song is 'pycagfdthedelic', composed and performed by me at 0:10. The shortest song by someone other than me is 'Stop' by Pink Floyd at 0:30.

Shortest track I think is "Avalanche Rock" by The Avalanches, clocking in at about 20 seconds.
Longest — Carbon Freeze / Luke Pursues the Captives / Departure of Boba Fett at 11:13.
