It's how you get new skills and abilities. That's it. Some games make the skill system a huge part of the story; this one doesn't. It's just there to facilitate the characters' growth.
No one ever talks about the sphere grid. Ever. In the entire game no one says shit about it. It's like a secret. You get one tutorial where Rikku shows Tidus something mystical and it's a big lipped alligator moment. Seriously what is the sphere grid. It can't be materia unless people somehow have that many slots.
