Shouldn't this be classified as a Trivia entry rather than a trope? It's about the creators of a work and the circumstances of a work's creation, rather than its content.

However, if it were reclassified, then something might have to be done about the in-universe/fictional examples.

Should we extend this trope to other analogous examples in other media? Most newspaper comics, Madden and other annual sports games, some long-running horror series, etc.?

I don't see why these wouldn't fit. Make sure you can explain in detail why any of these would fit, though.
