Currently Our Cryptids Are More Mysterious is the Cryptic supertrope page, collecting any examples of species that aren't common enough to have their own page yet. So that could also include examples like you describe. In fact, there's at least one such example on that page already: the Strong Bad Email episode about the mysterious myth (and/or legendary legend) of the "bear holding a shark".

Is there a trope for when a piece of media makes up its own animal/cryptid? The show I am trying to trope for made up its own species of bird that has kind of a cryptid status and I feel like there may be a trope for that but I can't find it.
