Cut content is, self-evidently, not part of the work's content, and can't be used outside Dummied Out and What Could Have Been at all. If you can't find this content through normal gameplay, it's as bad as speculation, and "it may be added later" is not a valid reason to keep it.

Basically, the version of Elden Ring that was released on discs was wildly different, both in lore and gameplay, from later versions. This version is considered incomplete by the community as many of the thinks were removed with the Day-One patch. Should we consider all the information from 1.00 version non-canon?

There is no war in Ba Sing Se.Since it's "officially released", I wonder it would count as own work depending on how many changes are there. Questions about "patched out" content probably deserve own discussion since they came up before.
TroperWall / WikiMagic CleanupSome of the changes are really huge. For example, Rykard is listed as Depraved Bisexual because the 1.00 version of Daedicar's Woe said he had a male lover. But later patches changed it and now it says that Daedicar was an adulterous woman.

If it's less than that, I think just mentioning that certain examples are only applicable to the original versions is fine. Is there a reason why adding disclaimers to original-specific examples would be controversial/wrong?
There is no war in Ba Sing Se.^ I wouldn't say the lore has changed that much, with all the vagueness and ambiguity that characterizes FromSoftware games. It's mostly the fact that the creator made those changes that makes me question whether they are still considered canon. Perhaps a disclamer would suffice.

Just want to note that this part is actually incorrect. The description of the Nomadic Merchant armor set (which is fairly well-hidden in an obscure area, but is obtainable ingame, not cut content) references the same event and specifically says the merchants summoned the flame.
''These merchants once thrived as the Great Caravan, but after being accused of heretical beliefs, their entire clan was rounded up and buried alive far underground.
Then, they chanted a curse of despair, and summoned the flame of frenzy.''
There remains a foothold out of this mire — now climb.Oh, that's good to know. I'm not going to cut that part then.
Just to be sure, do you also know of any mention of St. Trina's true identity in the game or is it only mentioned in the cut questline?

I've noticed that the Elden Ring pages make liberal use of the cut content that was data mined from the game files, there's even a section on the character page dedicated to the cut characters.
This makes some sense, as some of them help to understand the characters and mysteries of the game, and there is the possibility that they were cut out to save them for later content, such as St. Trina's questline. However, other information seems to contradict what is known, such as a cut dialogue in which Morgott refers to himself as Elden Lord, something that is impossible.
Furthermore, this information is presented as factually correct, although we do not know if this is the case. Bernahl's maiden is mentioned in his folder but is never mentioned in the base game and was apparently cut very early in development, as she was only mentioned in the Japanese version. It's commonly agreed that it was the merchants who summoned the Frenzied Flame in retaliation for being persecuted by the Golden Order, but this is only known thanks to Kalé's questline, which was cut and is not mentioned anywhere else in the game, in fact, Shabriri's Woe suggests that it was Shabriri himself who summoned the Frenzied Flame.
My point with this is not to argue whether everything I mentioned is true or not, what I want to discuss is whether it is right to use content that the creator has decided not to include in the final product and present it as valid, even if we don't know if it is still canon.
I think we should treat all information that is not in the final game as non-canon until the creator releases more content.
