I don't think there's any trope specifically for this, but it seems like there's something here. It's just a question as to what that something really is.
Just to set something straight first, the way you used "A Kind of One" in a sentence was not right. The mythological minotaur was a one. It's D&D and other modern media that have made the one into a kind — minotaurkind.
So part of the transition from one to kind means that the traits are kept even though they lost their original meaning. Take The Phoenix for example. In folklore and myth, this cycle of rebirth had a meaning to it. Now count how many video games treat phoenixes as disposable Attack Animals that are quite mortal if they take too much damage too quickly. To me, it's an inherent part of the transition from one to kind. It's unavoidable.
Since all works with minotaurs have a different take on it, it seems like Our Minotaurs Are Different should cover. Some minotaurs like mazes. Some like the outdoors. Some prefer china shops. They're all already different.
For what it's worth, the first thing that came to mind upon seeing this was Planet of Copyhats.

A trope where an entire race of fantasy species is based on a mythological creature that was A Kind of One, with many of the traits of the original despite there being no such connection in the work.
i.e. Dn D's minotaurs cannot be affected by spells causing the target to get lost and feel right at home in mazes. The reason being that the original minotaur lived his entire life in a maze, but there's no such in-universe explanation.
