The trick is pretty apparent from demo she is what you believe her to be. So if you wonder if she is hiding a knife and then attack her, she was hiding a knife. So whatever is truth about her, protagonist and narrator, narrator likely keeps saying she is a princess so she wouldn't appear as something else.
She's combat capable in most cases.
You can pick up the knife and swing at her and she'll knock you TF out. You might get lucky with a surprise attack. You could retrieve the knife, bring it, put it down, attack, and she comes at you like a Terminator.
Things get even more complicated in subsequent chapters where she remembers or reacts to what you did before, and your internal voices embody whatever you tried to do to her previously. Tried to save her? She's innocent. Tried to kill her? She's vicious. Betrayed her? She's feral. Tricked her? She's vengeful. Ignored her? She's lonely.

If you don't bring the knife she acts less tense and commanding even before she sees you and the conversation goes in way different way until cutting her arm at least. Like besides the more obvious example of the reflecting your beliefs thing(the knife materialization achievement), the steam page itself seems to foreshadow its about belief and weirdest version of her is if you didn't meet her at all before "world ended".

The devs were able to resolve the issues, but since the resolution happened after the devs announced the delayed release date on other storefronts, they're keeping the new release date to make sure everyone gets the game at the same launch date.
