I'm a bit unclear what the actual definition is. Some examples are about fan fiction writers killing off a character to make way for a ship. Other examples are about a character getting demonized for getting in the way of a ship. And some examples are just about fans hating a character for getting in the way of a ship. Are these examples all covered by this trope?

Yeah, the core of the definition seems to be "fans hate a character for being in the way of their ships", and the character dying, turning evil, becoming an asshole, or whatever are all specific ways this reaction can manifest.
