The way you described it fits a parody sue just fine, but if I had to suggest something I'd suggest poking fun at the things that normally makes a Mary sue bad.

One possible suggestion is to make the other characters react to the Parody Sue the same way typical audiences react to the common Mary Sue (i.e. with derision and exasperation) rather than hero worship.
Another is to make their "amazing feats" actually be something really mundane, and that everyone else is just overreacting.

I’m having trouble writing a character who exists as a parody of Mary Sues, specifically the kind seen in the myriad of isekai manga & anime. I could just go for the walking stereotype that exaggerates every trope in the book, but there MUST be more that I can jab at.
