When every single character in the game repeatedly states that they want the war to end so they can start working on helping Fodlan, and the text repeatedly states that their efforts actually succeeded and they left the world a brighter place than when they started - why assume that any ending where Hanneman survives involves him mass-producing magical weapons and having the relevant Lord or Byleth invade Sreng or something?

It's been fun.He can't mass produce them so easily. He has a paired ending that specifically mentions having a successor who aided him not only allowed them to be produced at a much cheaper price AND allowed them to be mass produced easier too. And Lysithea continues his research that ensures it will only be improved after he passes.
So the benefits of it aren't as good as they are in one scenario.

Every accusation by the GOP is ALWAYS a confession.That's his support with Marianne, which does imply that House Edmund's funding was needed to produce the devices - but that's also the only ending (among those that involve the devices) that implies that Hanneman isn't drawing on royal funding, because it specifically says that he's nearly destitute. The same ending also says that Hanneman later developed a school of research to study peaceful Crest applications at Marianne's urging, which makes me imagine that she wouldn't fund or keep contact with/marry someone who was making weapons. Because it's Marianne.
I'm also wondering how you see producing magical weapons as "cornerstones of progress" and fighting inequality, unless you think everyone's proposed solution to the Crest problem is to give commoners shanks that home in on Crest blood.
It's been fun.There is lot of useful crest that could be used out of combat. Healing ones and magical ones for example. Ones that spare uses of weapons could be repurposed for general tools ect...

Like Seteth runs the church in GD and is still Byleths subordinate on Church, but other endjngs include things like becoming a storybook writer instead and writing books for children as others draw it.

That's true, and a very fair point to raise. I just think it's needlessly pessimistic to assume that the only thing he ever used his research for, at the behest of his comrades and in the middle of a new golden age for Fodlan, was creating more weapons to invade somewhere else. Maybe something like a bow that Ellie The Crestless Town Guard can use to protect a village from a dark beast or a group of bandits, sure, but I just can't imagine any of the survivors of the war eager to mass-produce weapons for an army.
It's been fun.I'm not so sure that's an additional effect of Dimitri's crest so much as it's the same effect viewed through a different lens. Through the lens of gameplay, it doubles ATK, and through a narrative lens, it's super strength.
In short, same effect, just displayed differently for different contexts.

If the applications are there to be discovered, then surely they're also there to be discovered in other timelines, after all.
Like I said, the character endings are fundamentally happy endings, almost 100%, and while I'm sure things weren't all sunshine and fuzzy rainbows for all their lives, I do think the characters would strive to build the most peaceful and prosperous world they could. I don't think there are any characters who don't want (at least what they see as) what is best for Fodlan. Dubsteps not included, but also even them, I guess?

And there was a scholar who was bullying Marianne in the paralogue, so protecting the descendants of the Elites might not have been Rhea's goal.
