If your straight punch has a wind up you're doing it very wrong. And I'm talking about right cross, your jab should only have a quick 1 inch step with it.
The upper cut has a wind to it in the sense that you drop your hips so you can explode up with your thighs but if your arm is winding back...

Surely you know! ~ GODThere's about four forms of it but it's a quick short slightly angled hook designed to "dig" a fighter out who's fighting close (and low). If you've got a good lead up a hooker-cut is more effective, so if you know the guy's coming in a Hooker-cut will give a lot of power and is kinda hard to get away from without stepping back.

Can be as obvious as reaching back for a punch or as subtle as a shift in footing. The more you train and learn various moves the more likely you are to spot them.
You should also learn some ground work and basic take downs. Sometimes it is better to take a guy to the ground then to stay standing and trade blows. Big guys are fun when your 5' 9" and under. Being the Monkey on the back has it's advantages.

My physics teacher is of the opinion that a wrestler is the absolute worse person to go up in a fight against.

See the problem when people evaluate a lot of fighting styles as self defense it's in context of how they'd do against trained fighters. Fact of the matter is most street fights bar fights etc won't be against MMA masters but instead against a guy who wrestled for 2 weeks 10 years ago before he got cut by the team.
Against an untrained fighter knowing how to move with a good base, strike quickly avoid and counter strike. Most of the fights I've seen break out the opening shot is either a hammer fist arm punch, or a wild over the shoulder wind mill.

Most guys you will go against in random physical altercations will be rough and sloppy brawlers. Watch out for that windmill. Lol. You should still assume your opponent can fight though. No sense in underestimating them.

We're taught how to fight against regular people, not other fighters. On that note, we often train against attacks untrained people use - push up against a wall by your collar, strangle, etc.

"Boxing is useless too restrained." well yeah but most people aren't good enough fighters to take advantage of your lack of rounded fighting skills.
"TKD is a shit martial art, look how poorly it's done in MMA" well yeah it's not a perfect form, but if you kick someone in the face odds are he hasn't learned to defend it.
If you're good at highschool/college style wrestling you'd be able to put a guy on the ground and, what worst case just hold him down, or there's the option of trying to get the guy to give up with a submission hold or just ground and pound.
So yeah this forms might not stack up well against trained fighters, there's something to say for knowing how to do one or two things really well. Knowing how to step out of someone's range and use a 1-2 combo, or how to do a double leg take down, or the aforementioned kick to the face.
