Perhaps the Souter Seawolf is actually a relative of walruses that has adapted to be more efficient on land, even having longer limbs that can run, and even some fur like fur seals do. And since not all members of the Odobenids had the huge tusks walruses can have, it would explain the lack of them on the Seawolf. All of that could help some certain drunken workers mistake it's species and didstort eyewitness accounts.

[[WMG: The Souter Seawolf is actually a giant Odobenid]]
Odobenidae is the family walruses belong to, of which they are the only living member.... but only in our world.

It would certainly explain why walruses were referenced in the episode so much if the Seawolf ostensibly isn't one.
