** When the dragon firework goes off at the party, the shriek heard is Billy Boyd actually screaming, as he was unaware at the time that the firework was really going to explode on-set (he thought that it would be in a separate shot). It was not scripted, but the take ended up in the final cut.
** Much of the fight between Lurtz and Aragorn at Amon Hen was unchoreographed, unscripted, and ''very'' real due to some dodgy makeup effects on Lurtz's actor; specifically, his contacts eliminated a lot of his depth perception, resulting in him actually head butting Creator/ViggoMortensen quite hard, not pulling his punch on a sock to the gut, and famously throwing a real dagger straight at Mortensen's face because he got his aim wrong (which Mortensen instinctively deflected with his sword).
