* ConsummateProfessional: He takes his job, and the craft of sushi, dead seriously, and demands professionalism from his business partners. Any insult about his ability to cook sushi he sees as a challenge, and he will not tolerate anyone disparaging it without trying it first. He actually lets Dave be the manager of the restaurant so he's able to focus exclusively on running the kitchen and experimenting on new dishes.



* SupremeChef: Bancho is a master of his trade, and his backstory reveals he was a chef at a number of very prestigious Japanese restaurants before the Dugong Hotel incident and later founding Bancho Sushi. He can make awesome-tasting sushi out of literally any sea creature Dave gives him on top of all the mouthwatering recipes he can prepare, and one of the decorations for Bancho Sushi is a fugu (pufferfish) preparation license that belongs to him, which are [[TruthInTelevision notoriously difficult to obtain]] since they're essentially a certification that the chef can prepare an extremely poisonous fish in a way that eating it won't ''[[MasochistsMeal more or less instantly kill you]]''.
