Neither film looks good but I don't understand the hype on Snow White and the Huntsman. It looks like Red Riding Hood meets the Eragon movie (and like Eragon, it has a first-time director). Watch it disappoint.
Meanwhile, this film looks too corny for my liking but it should have a nice soundtrack (Alan Menken is doing the music).

This might be interesting to watch just because I haven't seen Phil Collins' daughter in anything before, and thus gets a slight pass since I sang along to Phil Collins a lot when I was 5 or something.
The other Snow White Movie (Huntsman) gets a small pass from me for having Charlize Theron, but gets a big neg from me for having a mirror with the audacity to say that Kristen Stewart is hotter than Charlize.

From what it looks like, I'm guessing that they're going with a "classic Fairy Tale protagonist(s) surrounded by Genre Savvy characters" setup. Which could actually be somewhat fun.

The trailers do not do justice to it at all. I'd say it was at least as good as your average Disney film, and had it been animated it probably could have passed for one. This movie is first and foremost a Fairy Tale, and a pretty entertaining one at that. It's definitely a lavish one.
As for the characters? Like I said, Fairy Tale. We have the Princess Classic, the scheming Evil Stepmother, the Prince Charming, the Plucky Comic Relief, the Minion with an F in Evil, etc., and they're all quite fun to watch. Julia Roberts does a much better job than the marketing would have you believe, and Lily does as much as she has to. Which isn't much, come to think of it. The limelight definitely belongs to the dwarves here. They get all the best scenes and lines, and I wouldn't be surprised if Snow/Half-Pint becomes a Fan-Preferred Couple. Brighton is funny as well. Poor Brighton.
The story is the weakest point. Besides being fairly generic it takes a while to really get started, moves at a slow pace and speeds up in all the wrong places. I would have liked to see more of Snow's bandit training and Character Development than just a montage. Prince Alcott's manservant has nothing to do after his first scene. The magic mirror, which receives a bizarre twist in this adaptation, is never really explained. The excuse to confront "the beast" in the end is rather poor. And the poison apple? Well...while what they do with it is kind of cool and a scene I'm not going to spoil, those of you eagerly waiting to see Lily Collins get tranquilized with a fruit are going to be disappointed.
My verdict? A decent film, but not really worth seeing in theaters. Save your money and time for something more worthwhile.

It does rush through Snow's Character Development a bit, and it really wants to be Princess Bride without managing to be anywhere near that witty, but I found it pretty good fun and could totally imagine it turning into a cult classic ten or fifteen years down the road. And it is very pretty. If you're curious about it but can't justify seeing it at the theater, watch it on the biggest tv you can find.

For those that have been living under a rock, we've got two Snow White films coming out this year. One that is directed by Rupert Sanders, and this one by Tarsem Singh.
From the two, this one seems the more lighthearted Once Upon A Time feel as opposed to the Grimm-esque feel of S Wat H. I'll probably check it out if for no other reason because it lacks Kristen Stewart.
(BTW I know this film comes out first, but the other film is more hyped).
