In our heart, Mr. Ando will always be a penguin.So this game itself is usually ripped on pretty hard, but the soundtrack is freaking awesome in my opinion.
Oh, and this thread needs some LUNAR LOVE.
While the True Final Boss of Birth By Sleep uses chanting, Terra's Final Boss theme doesn't.
I believe Ventus' Final Boss theme doesn't use any chanting either!
Melancholy and sad, but great!

Fantastic Supreme Überkaiser Emperor Folt of The Infinity and Beyond" ... "The First"!La-Mulana has an amazing final boss theme. It's made to sound like the MSX, so it's basically a chiptune. And it manages to achieve the whole "epic" feel without resorting to any of that chanting stuff.
What really makes this song amazing are the musical motifs. The song's intro is nearly the same as the fanfare that plays when you enter the eponymous ruins of La-Mulana for the first time, and the theme itself is largely a remix of the theme for the Surface. The Surface theme is also very likely to be the Player Character's theme, given the name; you play as an Adventurer Archaeologist, and the surface theme is called "Mr. Explorer" in the soundtrack.
This kind of drives home the entire point of the final battle. The Player Character is revealed late in the game to be The Chosen One, and he is the only one capable of putting and end to The Mother's suffering by killing her. Everything rests in his hands, and the fact that the final battle music is a remix of his theme shows that he is destined to triumph.
"Otherworld" was brought up earlier, but the true final boss music for Final Fantasy X is pretty awesome too even if the fight is anti-climactic.
Speaking of Final Fantasy, not every Final Boss theme in that series is Ominous Latin Chanting. I especially like Zeromus' theme!
The theme of the first game's remakes is also joyous to listen to!

Technically they're the penultimate bosses, but Lechku and Nechku's theme from Okami is awesome. Plus they're clockwork owls with top hats and monocles.
