Yeah, verified: I've played a bunch more. You do get Clay while digging through dirt, 1 Clay per 5-20 gathered Dirt probably. Thus the whole random number god thing is nonsense, with regards to getting clay.
The clay thing is no longer true. I gather wood by hacking at the dirt or snow beneath trees, with a sharpened stick. When the ground is dug out from beneath the tree, is is destroyed and forms something like 8 log-pieces that I can pick up (what trope is that, by the way?). But the digging into the dirt or snow, with the sharpened stick yelds not only dirt or snow, that I can pick up, but also the occasional lump of clay. Exploit-felling 3-6 such trees usually gives me one lump of clay per tree on average. Plenty.
And I believe it's a normal function of digging, whether you dig into snow or dirt, that you sometimes get a clay. Regardless of whether you dig with your fist (which is very slow) or a stick (still slow, but doable) or a more suitable tool such as a shovel or pickaxe.
