Assuming the latter weren't just humans painted pale with ears stuck on. It was a Holy Wood backlot, after all.

The elves were not featured, only mentioned (repeatedly) as possible heritage for that boy who looks like he's Elvish.

Not featured, no, but Moving Pictures mentions some elves, calling them "the rarest" of the races on the disc, being in the cafeteria. Some took this, given how elves are shown here, to mean they were in fact descended from elves.
