I don't think it was Hotch who got the profile wrong in "Doubt" he took responsibility for the mistake when he talked to Erin Strauss about it because he didn't want to throw anyone under the bus but Gideon had tunnel vision, the rest of the team thought the profile was wrong and they all had different opinions. Also, Hotch did not destroy Gideon's career, Gideon chose to leave because of how he perceives his ability to solve future cases.
