Most Protestant denominations DO NOT take the entire book of Genesis to be symbolic, they interpret it literally. I do understand the writer may have intended other biblical passages, but that is the impression I got, and also I realize a few verses can be both literal and symbolic.

There is a Jewish custom against saying or speaking God’s name in public or most places. I believe the “custom” of “not speaking his name” was made before the entire Bible was written.
