Not country could it be a cover of Tom's Diner by Suzanne Vega? I can't find any cover with a male singer, but the lyrics and song name are really similar

Could be Michael Nesmith's "Texas Morning" (or one of the other recordings)
I remember listening to this in early mid 2000s I think? It was a male singer talking about a diner and I distinctly remember a line about the coffee being black or whatever and maybe a line about talking to a waitress? I thought it was called something like Mama’s Diner and was about a small town diner.
