It always annoys me to see people touting "low-carb" as being healthy. Like, yes, people absolutely do need more nutrient-dense food, but people also need calories, and carbohydrates are the calories that specifically fuel your nervous system and brain. Gluten is the primary energy source used by, like, 99% of your body's cells, if you're not getting gluten by ingesting it, than your body is going to cannibalize itself to make its own, usually by breaking down proteins.

It doesn't break down protein until it's already dug into your fat reserves. And it doesn't use gluten as a primary fuel source, it uses carbohydrates while gluten is a protein.

Gluten is actually a protein complex made of two proteins, gliadin and glutelin.

But yeah the whole "If you don't take gluten you'll consume your own body" is nonsense considering some people are outright intolerant to gluten (A friend of mine and his brother suffer serious issues if they intake any. They've somehow not self digested despite their gluten free diet).
