It must really take a lot for a show that went for 4 seasons for fans to still consider it to have been screwed over for much of it duration.
I mean, those were 10 episodes long seasons.
But I admit that I could see it ending after the first season like Over the Garden Wall and each season gave me "huh, this is going longer than I'd expect" feeling.
You have to consider that each season consisted of ten 11-minute long episodes. All four seasons combined is 20 half-hours, which is the same length as a single season of... pretty much any other CN show. Hence why eight seasons didn't seem like a crazy ask; we basically wanted what, by most measures, would be a season two pickup.

eight seasons is being greedy!Most shows don't remain good after that many seasons.
New theme music also a box40 half-hours isn't being greedy. Even Nickelodeon gives most of their cartoons 40 half-hours, and they throw shows into graveyard slots like it's going out of style. At least give us a Wrap It Up order to conclude Amelia and Hazel's plotlines.

Especially given that the first four seasons were one production block of episodes. It's why seasons 3 and 4 still came out even though the execs were getting antsy after season 2 and really uncomfortable after season 3. It was already paid for and in production and the very short seasons (each one of which only really works out to two hours. Roughly 16-18 hours of content is really not that big a deal, regardless of how it's divided up) meant that season 4 was probably almost done by the time the execs cancelled the show.
If you want to complain about the number of seasons, go look at reality TV where they can rack up a ludicrous number of seasons because they'll sometimes put out multiple seasons in a year. Hell, Chopped over on the Food Network had six seasons in 2013 and some of the seasons that show put out overlapped. If they can do that, eight two hour long seasons of a show that's significantly cheaper per season than anything else the network puts out is actually completely reasonable.

The deal only covers animated television, so I’m still free to do animated movies and live-action movies or TV separate from CBS. There is also a clause in the deal that says I can still work on Infinity Train if that somehow got picked up again somewhere.
The most important part is at the end where he mentions a clause that lets him work on infinity train if it gets picked up.

The idea is to attract talent, not alienate them, and upfront going “hey, there’s this other show that got cancelled but that someone else might pick up and if it does, I’ll still be working on it” isn’t much of a dealbreaker.
In this case, CBS made a two year deal, right? So it’d be like Owen Dennis going “yeah, so Infinity Train got cancelled but someone else might pick it up and I want a clause to allow me to work on it if it happens somewhere other than CBS.”
CBS: “Yeah sure. It’s unlikely to happen within the two years we have stipulated and you’ll still be pitching any other new ideas you have to us, so it’s worth the risk.”

Before your eyes glaze over, it sounds like she’s making it a lot more serialized and a lot more emotional. A story about broken people healing each other through wacky magic shenanigans.

The original had very cruel jokes and backstories that could be compelling if taken seriously and not just empty "Haha Cruelty is hilarious!" Now I know that's an exaggeration the original did have plenty of heart (And even I admit some of the cruel jokes are hilarious Black Comedy) even if its not as "Touchy feely and serialized" as other shows and this reboot. But then Flanderization reached its ugly head and there was little point or heart in the show after a certain point beyond tired and mean spirited jokes.
I for one welcome this reboot. I actually want to judge if I enjoy it by seeing myself on my own terms before joining either the hype train or the haters crowd.
